The Cellar
Théo's sommelier sensibility shapes a cellar that takes its job seriously: a deep Champagne shelf, classical Burgundy and Bordeaux, an honest Loire and Rhône, and finds across Italy, Spain, Austria and Chile. Wines are chosen to pair with the menu, not to fill shelves.

The Bar
Louis trained in Paris and works with Théo to build a list that pairs with the kitchen as deliberately as the wine does. Classical technique, tropical notes, and a few quiet surprises.

Our Story
Bisou was created by Théo and Antoine, co-owners who learned in Paris's Michelin-starred kitchens before opening in Bangkok and then in Phuket. The foundation is unmistakably French — sauces, temperature control, technique, detail — but the perspective is broader. Time in Asia and travels through Japan inform a lighter, more modern expression: elegant, ingredient-driven, quietly inventive.
The dining room reflects the same idea: refined without stiffness, attentive without ceremony. The kind of place where a first date and a fiftieth anniversary feel equally at home.
